It's usually helpful to get a nonrefundable upfront deposit for any project (hourly or fixed rate!) and to get payments ahead of the milestones. It depends on what niche you're talking about! There are no industry standards for ghostwriting (as it's a pretty confidential business) and back when I did copywriting and content writing my clients were down to do any payment schedule I asked for. So I wouldn't worry too much about "the norm."
